Edo a pasta class with your Cordon Bleu Diploma stu­dents at Tante Marie. Dur­ing this class they learn all man­ner of pasta doughs and the first time they make it, they will knead the dough by hand, roll it with a rolling pin and cut it with a knife… this way they learn when it is too wet or dry, too thick or thin… be­cause they un­der­stand what it feels like!

Once they un­der­stand this, we let them use a pasta ma­chine! One of the dishes they make is this. Can­noli is a Si­cil­ian pas­try dessert and the word means ‘lit­tle tube”.
