Edo a pasta class with your Cordon Bleu Diploma students at Tante Marie. During this class they learn all manner of pasta doughs and the first time they make it, they will knead the dough by hand, roll it with a rolling pin and cut it with a knife… this way they learn when it is too wet or dry, too thick or thin… because they understand what it feels like!
Once they understand this, we let them use a pasta machine! One of the dishes they make is this. Cannoli is a Sicilian pastry dessert and the word means ‘little tube”.
