Oil, for greas­ing 3 x 220g cans

ready-to-eat prunes 400g rolled oats 50g ground al­monds 50g flaked al­monds 30g pump­kin seeds 20g sesame seeds 200g clear honey 3 eggs, beaten 1 Pre­heat oven to 180C/gas 4 and lightly oil and line a 23cm square bak­ing tin. 2 Drain prunes and squash them lightly with a fork. Set aside. 3 Mix to­gether rolled oats, ground al­monds, flaked al­monds, pump­kin seeds and sesame seeds. Stir in honey, add beaten eggs and mix thor­oughly. 4 Tip half oat mix­ture into tin, level sur­face and spread prunes on top. Cover with rest of oat mix­ture and press down lightly. 5 Bake for 25-30 min un­til set and gold­en­brown. Leave to cool com­pletely, then cut into 16 squares.
