1 Heat oven to 180C. Cut a cau­li­flower into bite-size flo­rets. In a bowl, com­bine 100g plain flour and 25g corn­flour. Sea­son, then add 125ml cold wa­ter and mix to form a thin bat­ter. 2 Tip 400g fine bread­crumbs into another mix­ing bowl. First dip cau­li­flower flo­rets in bat­ter to coat, then in bread­crumbs a few at a time, en­sur­ing each flo­ret is evenly cov­ered. 3 Put the coated cauli on a large baking tray and cook in the oven for 25 min un­til golden and crisp. 4 Trans­fer cau­li­flower from the oven into a mix­ing bowl and pour in a 260g bot­tle of spicy BBQ sauce, such as Jack Daniel’s Ex­tra Hot Ha­banero Bar­be­cue Sauce, toss­ing well to en­sure evenly coated. 5 Sprin­kle with 1 seeded, chopped red chilli, 2 chopped spring onions and 50g sesame seeds to serve.
