TUNA JACKET POTATO WITH LIME AND CHIVE MAYO
● 2 large baking potatoes, scrubbed ● 2tbsp light mayonnaise ● Finely grated zest of 1 lime ● 2tbsp chopped fresh chives ● 1 little gem lettuce, shredded ● 8 cherry tomatoes, quartered ● 2 x 160g tins Princes Tuna Chunks In Spring Water, drained
STEP 1 Prick the potatoes, then microwave on full power for 6-7 minutes. Turn over and microwave on full power for a further 6-7 minutes, until tender. STEP 2 Mix together the mayonnaise, lime zest and half the chives. STEP 3 Place the potatoes on serving plates and fill each one with some shredded lettuce and a few pieces of tomato. Spoon the drained tuna chunks on top, and finish off with the mayonnaise. Serve garnished with the remaining lettuce and tomatoes, then sprinkle with the rest of the chives. SHORT ON TIME?
