TUNA JACKET POTATO WITH LIME AND CHIVE MAYO

● 2 large bak­ing pota­toes, scrubbed ● 2tbsp light may­on­naise ● Finely grated zest of 1 lime ● 2tbsp chopped fresh chives ● 1 lit­tle gem let­tuce, shred­ded ● 8 cherry toma­toes, quar­tered ● 2 x 160g tins Princes Tuna Chunks In Spring Wa­ter, drained

STEP 1 Prick the pota­toes, then mi­crowave on full power for 6-7 min­utes. Turn over and mi­crowave on full power for a fur­ther 6-7 min­utes, un­til ten­der. STEP 2 Mix to­gether the may­on­naise, lime zest and half the chives. STEP 3 Place the pota­toes on serv­ing plates and fill each one with some shred­ded let­tuce and a few pieces of tomato. Spoon the drained tuna chunks on top, and fin­ish off with the may­on­naise. Serve gar­nished with the re­main­ing let­tuce and toma­toes, then sprin­kle with the rest of the chives. SHORT ON TIME?
