TWO-MINUTE SAUCES

Mix and match your poké with any of these four sauces. You’re welcome

SRIRACHA MAYO

✱ 225ml mayonnaise

✱ 3 tbsp sriracha (hot sauce)

✱ 1 tbsp soy sauce

✱ ½ lime, juiced Mix together the mayonnaise, sriracha, soy sauce and lime juice.

Add a dash of water if needed to get the right consistenc­y. Keep refrigerat­ed until ready to use.

SESAME SHOYU

✱ 3 tbsp soy sauce

✱ 3 tbsp toasted sesame oil

✱ 1 tbsp light brown sugar

✱ Togarashi powder (available in all good supermarke­ts), to taste

Watch out, this one’s complicate­d: mix all the ingredient­s together. Serve. Told you – tricky stuff.

LECHE DE TIGRE (TIGER’S MILK)

✱ ½ garlic bulb

✱ ½ red onion

✱ 1 red chilli

✱ 110ml fresh lime juice (5-6 limes, or available bottled in supermarke­ts)

✱ 1 small bunch coriander

✱ 110ml honey

✱ 1 tbsp fresh ginger, peeled

✱ 225ml coconut milk

Peel and roughly chop the garlic and red onion. Slice the chilli lengthways and remove the seeds. Put the garlic, red onion, lime juice, coriander, chilli, honey, ginger and coconut milk together in a blender and blitz until you have a smooth texture. Pass the mixture through a sieve to finish.

SWEET PONZU

✱ 450ml maple syrup

✱ 225ml soy sauce

✱ 110ml fresh lime juice

✱ 1 tbsp freshly grated ginger

Add all the ingredient­s to a bowl and whisk together. Yep. That’s really it. ◆
