It’s important not to under estimate how long it takes to get 100 people seated. Timings are important to a kitchen and if you are really late it can have an effect on the food. The most common mistake is imagining that getting 100 people to find their seat on a seating plan, grab a drink, go to the toilet and sit down will take 10 minutes - it won’t.
