RICHARD KAYE, HEAD CHEF AT THE KILCOT INN, NEWENT

Cotswold Life - - COTSWOLD WEDDINGS -

Choose what you and your partner want to eat. It is your big day and most wedding venues will be able to cater for dietary requirements within this. The most successful wedding meal I ever catered for was hot dogs for 100 guests followed by ice cream cones. Everyone joined in the sense of fun and it was what the bride and groom wanted.

It’s important not to under estimate how long it takes to get 100 people seated. Timings are important to a kitchen and if you are really late it can have an effect on the food. The most common mistake is imagining that getting 100 people to find their seat on a seating plan, grab a drink, go to the toilet and sit down will take 10 minutes - it won’t.
