One of the most ver­sa­tile herbs in the kitchen, chives will trans­form your sum­mer cook­ing. Toss them into potato salad, sprin­kle into mash, scat­ter over soup, and fold into omelettes and scram­bled eggs for a zip of mild onion flavour. You can also add to mayo or use to gar­nish dips. When cook­ing with them, add at the last minute to main­tain the flavour and tex­ture. Chives are per­fect with cheese – ev­ery­thing from souf­flés and savoury scones to toasties and tarts. For a quick sour­dough toast top­per, mix soft goat’s cheese with a lit­tle nat­u­ral yo­gurt, a pinch of sea salt and a grind of black pep­per, then stir in a hand­ful of chopped chives.
