WINTER SALAD Of MIXED HERBS, SQUASH AND POMEGRANATE
This is good to serve at this time of year when squash is at its best – the vibrant colours of the pomegranate, squash and salad herbs make it look very enticing.
450g butternut or similar squash, peeled, deseeded and cut into small cubes
1 tbsp olive oil, plus extra for greasing
Sea salt and freshly ground black pepper
60g pine nuts
2 handfuls of rocket or mixed salad herb leaves 4 tbsp pomegranate seeds
