WIN­TER SALAD Of MIXED HERBS, SQUASH AND POME­GRAN­ATE

This is good to serve at this time of year when squash is at its best – the vi­brant colours of the pome­gran­ate, squash and salad herbs make it look very en­tic­ing.

SERVES 4

450g but­ter­nut or sim­i­lar squash, peeled, de­seeded and cut into small cubes

1 tbsp olive oil, plus ex­tra for greas­ing

Sea salt and freshly ground black pep­per

60g pine nuts

2 hand­fuls of rocket or mixed salad herb leaves 4 tbsp pome­gran­ate seeds
