ITOTALLY con­cur with the writer of Let­ter of the Week (Au­gust 31). Com­pared to a small din­ner knife, a prop­erly de­signed but­ter knife not only sits more com­fort­ably on a side plate, but, crit­i­cally, has a broader blade—all the bet­ter to spread but­ter (or other emol­lient foods). At the Crown and Cas­tle in Or­ford, we al­ways set our ta­bles with David Mel­lor’s beau­ti­ful Sh­effield-made but­ter knives. Ruth Wat­son, Suf­folk
