Horticultural aide memoire Cut asparagus
Half the pleasure of growing asparagus resides in the anticipation. The crop can generally only be harvested during May, though early seasons do occur. As soon as the spears push through the soil, you should pounce. Slide the knife down the spear and cut cleanly through, taking care not to damage the invisible neighbouring spears just below the soil. Hasten to the kitchen, trim the ends, rinse, steam for seven minutes and eat with some butter. There are moments when the world’s agenda can wait. Make the most of the brief season, then leave it to grow.
