Half the plea­sure of grow­ing as­para­gus re­sides in the an­tic­i­pa­tion. The crop can gen­er­ally only be har­vested dur­ing May, though early sea­sons do oc­cur. As soon as the spears push through the soil, you should pounce. Slide the knife down the spear and cut cleanly through, tak­ing care not to dam­age the in­vis­i­ble neigh­bour­ing spears just be­low the soil. Has­ten to the kitchen, trim the ends, rinse, steam for seven min­utes and eat with some but­ter. There are mo­ments when the world’s agenda can wait. Make the most of the brief sea­son, then leave it to grow.
