IN­GRE­DI­ENTS

1 small onion, diced 1 ta­ble­spoon rape­seed oil ½ red chilli, sliced 1 clove gar­lic, finely chopped 300g medium-large slic­ing toma­toes, peeled, cored, de-seeded and diced 60g golden gran­u­lated sugar Pinch ground cloves 50ml bal­samic vine­gar

METHOD

Fry onion slowly un­til soft. Add chilli and gar­lic for last 5 min­utes. Add toma­toes, sugar and cloves. Stir. Stir in vine­gar, bring to the boil then re­duce heat and cook gen­tly for 30- 40 min­utes un­til re­duced and jammy. Cool, cover and re­frig­er­ate. Eat within 2 weeks.
