Sim­ple smok­ing

If you fancy ex­per­i­ment­ing with smok­ing a few fil­lets of your fresh-caught fish, then a quick and sim­ple way to do so is to use the bis­cuit tin method. All you need for this is an old bis­cuit tin, a bit of wire mesh (fine chicken wire will do) and some oak (or other hard­wood) chip­pings. Place the bits of oak in the bot­tom of the tin, then fold up the mesh and squash it in on top. Place the bits of fish on the mesh, put the lid on the tin and then stand it on a source of heat, such as a gas ring or the hot­plate of your stove (or a camp­fire, if you are still on the beach) for a while. This gives a hot smoke, so when they’re done you will be able to eat the de­li­cious fish straight from the tin.
