If you fancy experimenting with smoking a few fillets of your fresh-caught fish, then a quick and simple way to do so is to use the biscuit tin method. All you need for this is an old biscuit tin, a bit of wire mesh (fine chicken wire will do) and some oak (or other hardwood) chippings. Place the bits of oak in the bottom of the tin, then fold up the mesh and squash it in on top. Place the bits of fish on the mesh, put the lid on the tin and then stand it on a source of heat, such as a gas ring or the hotplate of your stove (or a campfire, if you are still on the beach) for a while. This gives a hot smoke, so when they’re done you will be able to eat the delicious fish straight from the tin.
