Crispy fried stinging nettles

In spring, nettles are at their sweetest, so now is the time to eat them. Careful not to sting yourself, cut the young tops from the plant and throw them into a frying pan with a knob of butter. Cook for five minutes on a medium heat, stirring until crispy, then turn the leaves on to a paper towel to cool.
