Turmeric Buttermilk Dressing

SERVES ABOUT 4 (70 calories)

100 ml live cultured buttermilk (or kefir) Juice of ½ large lemon 2 tbsp olive oil 1 tsp English mustard 1 tsp ground turmeric ½ tsp xanthan gum (optional thickener) WHISK together the buttermilk and lemon juice. Gradually whisk in the olive oil, mustard and turmeric. Season to taste with sea salt and plenty of black pepper.
