Fruit crumble

Serves 4
l 200ml apple juice l 1 cinnamon stick l 1 star anise
l 2 apples, peeled, cored and cut into chunky wedges
l 3 pears, peeled, cored and cut into chunky wedges
l 4 plums, stones removed and cut into quarters l 4 figs, quartered l 150g blackberries l 30g porridge oats l 60g plain flour l 20g brown sugar l 1 tsp cinnamon l 50g low-fat spread l 4 tbsp 0% fat natural Greek yoghurt IN A SAUCEPAN, heat the apple juice, cinnamon stick and star anise until it starts to simmer. Add the apples, pears, plums and figs. Simmer for around 20 minutes, adding the blackberries for the last 5 minutes. Preheat the oven to 200c, fan 180c, gas mark 6. Transfer the fruit from the pan to a 20cm x 22cm dish, using a slotted spoon. Continue cooking the liquid until it reduces to a sticky syrup. Remove the cinnamon stick and star anise, then pour the syrup over the fruit. Meanwhile, mix the oats, flour, sugar and cinnamon together in a bowl. Rub in the spread using your fingertips until the mixture resembles coarse breadcrumbs. Scatter the crumble over the fruit and bake for 20-25 minutes, until golden brown. Serve topped with 1 tbsp yoghurt each.
