THE chef’s jolly tour begins in the Orkney Islands, with him cooking scallops in Stromness Harbour. It looks quite enticing — even allowing for the wind that’s ruffling his hair — but the best moment is his trip farther north to meet Billy Muir (pictured with Martin), a pensioner with 20 jobs on the tiny island of North Ronaldsay.
