Lentils slash diabetes risk
REPLACING half a serving of potatoes with lentils could prevent diabetes as it reduces blood sugar by up to 35%, a study found.
And used instead of rice the same way they cut glucose levels – a key factor in Type 2 diabetes – by 20% within two hours.
Scientists at Guelph University, near Toronto, found the fibre-rich lentils slowed digestion.
Prof Alison Duncan, said: “We hope this will make people more aware of the benefits of pulses.”
