Len­tils slash di­a­betes risk

RE­PLAC­ING half a serv­ing of pota­toes with len­tils could pre­vent di­a­betes as it re­duces blood sugar by up to 35%, a study found.

And used in­stead of rice the same way they cut glu­cose lev­els – a key fac­tor in Type 2 di­a­betes – by 20% within two hours.

Sci­en­tists at Guelph Univer­sity, near Toronto, found the fi­bre-rich len­tils slowed di­ges­tion.

Prof Ali­son Dun­can, said: “We hope this will make peo­ple more aware of the ben­e­fits of pulses.”
