They are usually discarded, but onion skins are packed with goodness and can be used in cooking. The skins contain fibre and a plant pigment called quercetin, which can help reduce blood pressure. You can’t actually eat them – but you can add them to stews and soups, then remove them before serving up. The first inner layer of the onion is similarly nutritious, and it can be eaten. Broccoli leaves are also edible (once steamed) and are full of vitamins A and C. Celery leaves, meanwhile, are rich in magnesium.
