Zippy tzatziki
Ready in 10 minutes
½ cucumber, peeled, deseeded and grated 200g fat-free natural Greek yoghurt 2 garlic cloves, crushed Small handful of finely chopped fresh mint 1 tbsp lemon juice
1 Put the cucumber, yoghurt, garlic, mint and lemon juice in a bowl, season to taste and stir to mix all the flavours together. Keep in the fridge for up to three days and serve with your favourite crudités.
