If your clothes are feel­ing tighter af­ter two months of lock­down but you still want a break from the home-cook­ing rou­tine former Suf­folk restau­ra­teur Regis Crepy may have the an­swer. Regis sold his Laven­ham restau­rant in 2018 and set up a new busi­ness in Cam­bridge, with his son Alex, cre­at­ing au­then­tic flamkuche, a tra­di­tional, pizza-style dish orig­i­nally from eastern France. Dubbed the ‘skinny pizza’, flamkuche has a thin, rec­tan­gu­lar base made with yeast free dough, which cooks in 90 sec­onds. It is spread with sea­soned crème fraîche or tomato sauce and topped with a com­bi­na­tion of savoury in­gre­di­ents. Sweet ver­sions are also avail­able. Dur­ing lock­down, Regis and Alex are of­fer­ing a de­liv­ery ser­vice any­where in Suf­folk of flamkuche, a few other pop­u­lar dishes and some wine.

They have also in­tro­duced a DIY Flamkuche Flat­pack for peo­ple to make at home, with the equiv­a­lent of two large sizes and all the nec­es­sary in­gre­di­ents – Amelie’s unique dough base, lar­dons, crème fraiche, onions, gruyere and in­struc­tions.
