If your clothes are feeling tighter after two months of lockdown but you still want a break from the home-cooking routine former Suffolk restaurateur Regis Crepy may have the answer. Regis sold his Lavenham restaurant in 2018 and set up a new business in Cambridge, with his son Alex, creating authentic flamkuche, a traditional, pizza-style dish originally from eastern France. Dubbed the ‘skinny pizza’, flamkuche has a thin, rectangular base made with yeast free dough, which cooks in 90 seconds. It is spread with seasoned crème fraîche or tomato sauce and topped with a combination of savoury ingredients. Sweet versions are also available. During lockdown, Regis and Alex are offering a delivery service anywhere in Suffolk of flamkuche, a few other popular dishes and some wine.
They have also introduced a DIY Flamkuche Flatpack for people to make at home, with the equivalent of two large sizes and all the necessary ingredients – Amelie’s unique dough base, lardons, crème fraiche, onions, gruyere and instructions.
