Give your well­be­ing a boost in the colder months with this win­ter soup that’s burst­ing with goodnes and greens

Spinach & wa­ter­cress soup Put 100g baby spinach, 100g wa­ter­cress, 1 sliced spring onion, 100ml veg­etable stock, ½ an av­o­cado, 100g cooked whole­grain rice, juice ½ lemon and 2 tbsp mixed seeds in a

blender with a lit­tle sea­son­ing to taste. Whizz un­til smooth. Heat un­til pip­ing hot to serve. Scat­ter over some toasted

seeds if you want added crunch. Can be frozen for up to 1 month once cooled. Serves 1.
