Hal­loumi with bul­ghar, chick­pea & rocket salad


Serves 4 Prep 10 mins Cook 20 mins £1.25 a por­tion 531 kcals, 27g fat, 12g sat. fat, 1g sugar

200g bul­ghar wheat 250g pack hal­loumi, cut into 8 slices 5 tbsp olive oil zest and juice 2 limes 1 tsp sweet pa­prika 400g can chick­peas, drained and rinsed 70g bag rocket

Cook the bul­ghar wheat fol­low­ing pack in­struc­tions. Mean­while, in a non-stick pan, fry the 8 slices of hal­loumi in 2 tbsp olive old for about 3-4 mins on eatch side un­til golden and start­ing to crisp up.

2 Mix to­gether the lime zest and juice, pa­prika and re­main­ing olive oil, and stir this through the bul­ghar us­ing a fork. Toss in the chick­peas and rocket, and serve with the fried hal­loumi.

TIP Cous­cous, quinoa or a mix­ture of grains would also be Li de­li­cious in this recipe. For a pro­tein-packed al­ter­na­tive, try us­ing two cans of green lentils.
