Roasted tomato, moz­zarella & rocket


Heat oven to 200C/180C fan/gas 6. Lay 350g halved baby plum

toma­toes, cut side up, in a roast­ing tray and driz­zle with 1 tbsp olive oil, 1 tbsp bal­samic vine­gar and a few

thyme sprigs, chopped. Sea­son and cook for 30 mins. Mean­while, toast 4 thick slices bread (sour­dough works well). Di­vide be­tween 2 plates and top with the toma­toes. Scat­ter on 125g ball torn moz­zarella, a few basil leaves and a hand­ful rocket. Serves 2.
