Chunky oven chips

To make the chips, heat oven to 200 C/ fan 180C/gas 6. Cut 4 bak­ing pota­toes each into 8 wedges, and put in a roast­ing tin. Driz­zle over 3 tbsp olive oil, season well, then sprin­kle a good pinch of hot chilli pow­der over half of the pota­toes and bake for 40-50 min­utes, turn­ing oc­ca­sion­ally. Serves 4

Easy tomato salsa

Tip a 400g can chopped toma­toes, a roughly chopped red chilli, 2 roughly chopped toma­toes, a small bunch of co­rian­der, 2 gar­lic cloves, the zest and juice of 1 lime and 1 tsp caster sugar into a food pro­ces­sor. Whizz for about 20 se­conds. Season to taste.

Quick gua­camole

Halve, stone and peel a large, ripe av­o­cado, then roughly chop the yià > ` Ì « Ì > v ` «À ViÃà À° Add 5 tbsp of the Easy tomato salsa (see above) and whizz to a chunky purée. Trans­fer to a serv­ing bowl, then squeeze over the juice of 1 lime to stop the gua­camole from turn­ing brown.

Herby fro­mage frais

Mix 4 tbsp roughly chopped fresh herbs with 400g of fro­mage frais. Season to taste.
