Minty pesto

Makes 1 small jar (about 300g). In a blender, whizz to­gether a small pack fresh mint leaves, a small pack fresh basil, £ää} y> i` toasted al­monds, 25g grated parme­san, 8 tbsp ex­tra vir­gin olive oil, the zest of ½ lemon and 1 small gar­lic clove. Season to taste, and add a lit­tle wa­ter if it’s too thick.
