Spaghetti nests

lit­tle but­ter or oil, for the tin

140g spaghetti

6 tsp tomato pasta sauce

6 medium eggs

6 basil leaves

Heat oven to 200C/180C fan/gas 6. But­ter or oil 6 holes in a muf­fin tin. Cook the spaghetti fol­low­ing pack instructions, then cool un­der run­ning wa­ter and drain. Di­vide most of the spaghetti be­tween the 6 holes and cre­ate nests. Top with some sauce, then top with an egg.

Wrap the re­main­ing spaghetti around the yolks. Tap the tin so that the whites seep into the spaghetti. Bake for 20 mins un­til the whites are set but the yolks are still runny. Re­move from the tin and serve topped with basil leaves.
