Mango & passion fruit ice


This tangy and re­fresh­ing dessert is al­most as easy as mak­ing ice cubes! Serves 4 Prep 15 mins plus freez­ing Q Q No cook Q

1 litre car­ton of mango & passion fruit

smoothie 4 pas­sion­fruits, halved 1 mango, peeled, stoned and sliced

1 Pour the smoothie into a con­tainer such as a loaf tin and freeze overnight, or un­til solid. Re­move from the freezer and al­low to soften slightly for 10-15 mins. Scrape out the seeds from the passion fruit and set aside.

2 Scoop the frozen smoothie into rough balls us­ing an ice-cream scoop or spoon, then place in­side each halved passion fruit. Serve with sliced mango and passion fruit seeds. PER SERV­ING 192 kcals, fat 1g, sat­u­rates none, carbs 47g, sug­ars 41g, fi­bre 9g, pro­tein 2g, salt none
