Mango & passion fruit ice
This tangy and refreshing dessert is almost as easy as making ice cubes! Serves 4 Prep 15 mins plus freezing Q Q No cook Q
1 litre carton of mango & passion fruit
smoothie 4 passionfruits, halved 1 mango, peeled, stoned and sliced
1 Pour the smoothie into a container such as a loaf tin and freeze overnight, or until solid. Remove from the freezer and allow to soften slightly for 10-15 mins. Scrape out the seeds from the passion fruit and set aside.
2 Scoop the frozen smoothie into rough balls using an ice-cream scoop or spoon, then place inside each halved passion fruit. Serve with sliced mango and passion fruit seeds. PER SERVING 192 kcals, fat 1g, saturates none, carbs 47g, sugars 41g, fibre 9g, protein 2g, salt none
