Tortellini with lemon & ricotta

Q250g frozen ricotta & spinach tortellini 50g frozen peas
50g frozen broad beans
1 tbsp olive oil
1 lemon, zested
50g ricotta
1 Cook the tortellini in a pan of boiling salted water for 3-4 mins. Add the peas and broad beans, then cook for 1 min more to heat through.
2 Drain well, then toss through the olive oil and lemon zest. Spoon onto plates, dollop over the ricotta and serve.
