Miss Hope’s cu­cum­ber sand­wiches with straw­berry and mint

Makes 4 rounds

4-6 mint leaves, freshly chopped • 4 tsp may­on­naise • A quar­ter of a cu­cum­ber

4 medium straw­ber­ries

A lit­tle soft­ened but­ter • 8 slices white bread • Salt and freshly ground black pep­per Method Stir the mint, may­on­naise and a lit­tle sea­son­ing together in a bowl. Peel the cu­cum­ber and slice it very finely. Hull the straw­ber­ries and finely slice them. But­ter all the white bread and lay the cu­cum­ber and straw­ber­ries on top to cover four of the slices. Spread a lit­tle mint may­on­naise over the re­main­ing four slices. Sand­wich the two halves together, then cut the crusts off in a la­dy­like way. Cut into quar­ter tri­an­gles and wash down with fizz.
