Miss Hope’s cucumber sandwiches with strawberry and mint
Makes 4 rounds
4-6 mint leaves, freshly chopped • 4 tsp mayonnaise • A quarter of a cucumber
4 medium strawberries
A little softened butter • 8 slices white bread • Salt and freshly ground black pepper Method Stir the mint, mayonnaise and a little seasoning together in a bowl. Peel the cucumber and slice it very finely. Hull the strawberries and finely slice them. Butter all the white bread and lay the cucumber and strawberries on top to cover four of the slices. Spread a little mint mayonnaise over the remaining four slices. Sandwich the two halves together, then cut the crusts off in a ladylike way. Cut into quarter triangles and wash down with fizz.
