GUESTS TRAVEL far and wide to visit North­cote, which strives to be an oa­sis for gas­tron­omy, great wine and gen­uine ser­vice. The fact that it has held a Miche­lin star for the last 21 years is tes­ta­ment to the team’s ded­i­ca­tion to their creative dishes, which fo­cus on us­ing the best sea­sonal and lo­cally sourced in­gre­di­ents. Born in Lan­cashire, Lisa be­gan her culi­nary ca­reer at Lancaster & More­cambe Col­lege. Af­ter grad­u­at­ing, she worked in sev­eral pres­ti­gious restau­rants, in­clud­ing the two Miche­lin-starred Le Champignon Sau­vage in Glouces­ter, be­fore ar­riv­ing at North­cote in 2001. Lisa works along­side Chef Pa­tron Nigel Ha­worth and in 2015, af­ter al­most a decade as North­cote’s only fe­male Head Chef, Lisa was pro­moted to Ex­ec­u­tive Head Chef. Lisa lives and breathes food; it is this pas­sion that means she is al­ways look­ing for in­ter­est­ing in­gre­di­ents and tech­niques, and ex­per­i­ment­ing to cre­ate dishes that in­cor­po­rate her Lan­cashire roots, and where the in­gre­di­ents and their flavour shine through. Au­tumn is a par­tic­u­larly favourite sea­son for Lisa as she sees lots of inspiration in the in­gre­di­ents that are avail­able from the coun­try­side that sur­rounds North­cote. “We’re re­ally lucky in our area that au­tumn brings so much game, and other sea­sonal in­gre­di­ents that we can com­bine it with, to come up with some in­ter­est­ing dishes. It’s a great time of year for be­ing creative. We’ve re­cently added a partridge dish to the menu which pairs the del­i­cate flavour of the bird with damsons that we get from the Lyth Val­ley in Cum­bria. I re­ally en­joy be­ing able to put our mod­ern take on lo­cal and sea­sonal in­gre­di­ents.” Each year, Lisa is also part of North­cote’s an­nual gas­tro­nomic event, Ob­ses­sion, that Nigel launched in 2001 as a cel­e­bra­tion of great food and wine among great com­pany that shares his ‘ob­ses­sion’ with qual­ity gas­tro­nomic ex­pe­ri­ences. Ob­ses­sion 18 is cel­e­brat­ing 18 years and will take place over 18 nights from 18th Jan­uary to 4th Fe­bru­ary 2018. Miche­lin-star chefs travel from across the globe to North­cote to serve their own Ob­ses­sion Menu, with each night a com­pletely unique ex­pe­ri­ence. »
