Mud­dle the grape­fruit seg­ments with the gin and lemon juice in a cock­tail shaker un­til prop­erly blended. Then shake this mix­ture with the rest of the in­gre­di­ents, bar the soda wa­ter and strain into a high­ball glass filled with ice. Top up with the soda wa­ter, then slot in the cit­rus peel to gar­nish. Sum­mer in a glass.
