Tdum­lon­ he MasterChef pro­duc­tion line of qual­ity chefs is up and run­ning again. Since win­ning The Pro­fes­sion­als in

2013, Steven Ed­wards has kept a rel­a­tively low pro­file, qui­etly build­ing up a rep­u­ta­tion as a high-end pri­vate-events chef, bring­ing his brand of flavour-packed, sea­sonal cook­ery across the length and breadth of the UK.

Etch in Brighton marks his first foray as a restau­ra­teur.

He’s sourc­ing the ma­jor­ity of in­gre­di­ents from the Sus­sex coun­try­side and lo­cal pro­duc­ers, serv­ing a tast­ing menu only in the 36-cover restau­rant. Pick from four (£40), five (£50) or eight (£60) cour­ses, with a menu that changes on a weekly ba­sis. Dishes in­clude the likes of pea, wild gar­lic, as­para­gus and duck egg; scal­lop with spring onion and lamb and broc­coli. It’s a young and dy­namic din­ing room staffed by trendy South Coast lo­cals who bring a buzzy vibe to each ser­vice.
