2013, Steven Edwards has kept a relatively low profile, quietly building up a reputation as a high-end private-events chef, bringing his brand of flavour-packed, seasonal cookery across the length and breadth of the UK.
Etch in Brighton marks his first foray as a restaurateur.
He’s sourcing the majority of ingredients from the Sussex countryside and local producers, serving a tasting menu only in the 36-cover restaurant. Pick from four (£40), five (£50) or eight (£60) courses, with a menu that changes on a weekly basis. Dishes include the likes of pea, wild garlic, asparagus and duck egg; scallop with spring onion and lamb and broccoli. It’s a young and dynamic dining room staffed by trendy South Coast locals who bring a buzzy vibe to each service.
