Ask any­one who at­tended a French school can­tine, and they will prob­a­bly say that their favourite as­pect of it was the Christ­mas lunch. Served in the run up to the big day, the menu had a few ex­tra cour­ses and some rare dishes. De­pend­ing on the school’s bud­get, chil­dren could be served foie gras and roast tur­key; most kids re­mem­ber fondly the crispy pommes dauphines pota­toes, smoked sal­mon and minia­ture bûche de Noël (Christ­mas log). That day, chil­dren linger at the ta­ble, ex­cited about the hol­i­days, with their bel­lies full of an early Christ­mas feast!
