As men­tioned above, French school kids are taught from a young age to ap­pre­ci­ate a meal. But they are also in­tro­duced very early on to plenty of veg­eta­bles and foods that may seem un­usual to Bri­tish par­ents. Some French adults will gri­mace today at the thought of the can­tine’s ham and chicory, beef’s tongue (my per­sonal night­mare) or even an­douil­lette (sausage made from pig’s colon). How­ever, I re­mem­ber see­ing many chil­dren hap­pily tuck­ing into these dishes. What­ever ev­ery­one’s tastes, the va­ri­ety of­fered at French schools makes less fussy, more ad­ven­tur­ous young eaters.
