As mentioned above, French school kids are taught from a young age to appreciate a meal. But they are also introduced very early on to plenty of vegetables and foods that may seem unusual to British parents. Some French adults will grimace today at the thought of the cantine’s ham and chicory, beef’s tongue (my personal nightmare) or even andouillette (sausage made from pig’s colon). However, I remember seeing many children happily tucking into these dishes. Whatever everyone’s tastes, the variety offered at French schools makes less fussy, more adventurous young eaters.
