This sin­is­ter-look­ing root vegetable looks like a thin black carrot, only with a thicker and rougher skin. It is of­ten con­fused with sal­si­fis or sal­sify. Peel them, boil them and then toss them into a gratin, roast them or sim­ply en­joy them coated in but­ter and pars­ley.
