Fed up with boiled cauliflower? Pop it in the oven in­stead and set it to work with spices to give de­li­ciously roasted flo­rets.

You will need: 1 cauliflower 2 tsp co­rian­der seeds Pinch salt and pep­per 3 gar­lic cloves 2 tbsp olive oil

Method: 1. Pre­heat oven to 200C (fan 180C/Gas mark 6). 2. Cut the cauliflower into bite-size pieces. Bash the co­rian­der seeds and sea­son­ing in a pes­tle and mor­tar. Add the gar­lic cloves and con­tinue to pound, then mix in the olive oil. 3. Pour over the flo­rets to coat them thor­oughly then place in a bak­ing tray and roast for 25-30 min­utes. 4. Keep check­ing un­til the flo­rets are ten­der and lightly browned at the edges.
