Fed up with boiled cauliflower? Pop it in the oven instead and set it to work with spices to give deliciously roasted florets.
You will need: 1 cauliflower 2 tsp coriander seeds Pinch salt and pepper 3 garlic cloves 2 tbsp olive oil
Method: 1. Preheat oven to 200C (fan 180C/Gas mark 6). 2. Cut the cauliflower into bite-size pieces. Bash the coriander seeds and seasoning in a pestle and mortar. Add the garlic cloves and continue to pound, then mix in the olive oil. 3. Pour over the florets to coat them thoroughly then place in a baking tray and roast for 25-30 minutes. 4. Keep checking until the florets are tender and lightly browned at the edges.
