Whole roasted garlic
Roasting whole heads of garlic is simple to do and softens the cloves into a gorgeous sweet, mellow puree.
Cut ½cm (¼in) from the tops. Peel away enough papery skin to reveal individual cloves, drizzle with olive oil and wrap in foil, keeping heads upright.
Bake in a preheated oven at 180C (fan oven) or equivalent for 30-40minutes or until cloves are soft, golden and starting to caramelise. Squeeze warm cloves out of their skins onto bread or toast or use for cooking.
