Whole roasted gar­lic

Roast­ing whole heads of gar­lic is sim­ple to do and soft­ens the cloves into a gor­geous sweet, mel­low puree.


Cut ½cm (¼in) from the tops. Peel away enough pa­pery skin to re­veal in­di­vid­ual cloves, driz­zle with olive oil and wrap in foil, keep­ing heads up­right.

Bake in a pre­heated oven at 180C (fan oven) or equiv­a­lent for 30-40min­utes or un­til cloves are soft, golden and start­ing to caramelise. Squeeze warm cloves out of their skins onto bread or toast or use for cook­ing.
