Carry on lifting leeks
Leeks are very tasty and can be cooked in many ways. Being hardy, they can stay in the ground until you need them, although once harvested they’ll stay fresh for a week or so in the fridge. When lifting, use a fork to ease the long stem out of the soil. Peel back the outer layer of leaves down to the root and use a knife to slice through the base of the stem just above the roots. The long leaves are then trimmed back.
