Don’t panic if something goes wrong in the kitchen – it happens to the best of us, and necessity is the mother of invention! Here are some useful rescues to know about: Over-whipped cream Add a splash of milk and gently whisk in to a smooth consistenc­y. Split chocolate Overheated chocolate can seize, split and become grainy. Quickly remove from heat and stir in a small handful of un-melted chocolate. If that doesn’t work, try mixing in 1tsp boiling water, a dash of hot milk or cream, or a little melted butter. Split mayonnaise Gradually whisk the split mixture back into a clean bowl containing a new egg yolk and start the process again.
