In a small pan, gen­tly dis­solve 125g (4oz) caster sugar in 200ml (⅓ pint) wa­ter with the pared zest of a le­mon and or­ange; sim­mer for 2min; strain into a jug with 5 gela­tine leaves (pre-soaked in wa­ter for 5min); stir un­til dis­solved, then add 200ml (⅓pint) Pimm’s No1 Cup and 200ml (⅓pint) lemon­ade; pour into 6 serv­ing glasses, cool, add chopped straw­ber­ries, cu­cum­ber and or­anges; chill un­til set and dec­o­rate with fresh mint leaves.
