Dur­ing its short peak sea­son, this ver­sa­tile veg is de­li­cious eaten straight from the pod. At other times, the beans are at their best flavour- and tex­ture-wise when dou­ble pod­ded, re­veal­ing their bright green cen­tres. They’re a per­fect match for fresh citrus flavours but stand up to strong, salty pancetta and chorizo, too. We love them piled up on puff pas­try with peas and pea shoots for an easy sum­mer lunch.
