During its short peak season, this versatile veg is delicious eaten straight from the pod. At other times, the beans are at their best flavour- and texture-wise when double podded, revealing their bright green centres. They’re a perfect match for fresh citrus flavours but stand up to strong, salty pancetta and chorizo, too. We love them piled up on puff pastry with peas and pea shoots for an easy summer lunch.
