Home­made Peanut But­ter Cups

150g dark choco­late (70% co­coa solids) 2 tsp co­conut oil 60g nat­u­ral peanut but­ter

To make the cups, place 8-10 mini cup­cake lin­ers onto a bak­ing tray and set aside for the mo­ment. Place the choco­late and the oil into a heat­proof bowl, set over a pan of sim­mer­ing wa­ter and stir un­til fully melted and smooth. Spoon a lit­tle of the choco­late into each pa­per liner, about 2 tsp each. Place the bak­ing tray into the freezer for about choco­late is al­most fully set. Spoon the peanut but­ter into the pa­per lin­ers, di­vid­ing equally be­tween each cup. Top the peanut but­ter cups with the re­main­ing choco­late, seal­ing in the peanut but­ter. Place the cups back into the freezer for a cou­ple of min­utes, sprin­kle the cups with a lit­tle sea salt.

Place the cups into a small con­tainer and keep in the fridge un­til ready to eat. The cups will keep for a cou­ple of weeks if kept in a sealed con­tainer and re­frig­er­ated. If you pre­fer these a lit­tle sweeter, like the candy ver­sion, you can sweeten the peanut but­ter us­ing of ta­ble­spoons mixed in should do the trick.
