Homemade Peanut Butter Cups
150g dark chocolate (70% cocoa solids) 2 tsp coconut oil 60g natural peanut butter
To make the cups, place 8-10 mini cupcake liners onto a baking tray and set aside for the moment. Place the chocolate and the oil into a heatproof bowl, set over a pan of simmering water and stir until fully melted and smooth. Spoon a little of the chocolate into each paper liner, about 2 tsp each. Place the baking tray into the freezer for about chocolate is almost fully set. Spoon the peanut butter into the paper liners, dividing equally between each cup. Top the peanut butter cups with the remaining chocolate, sealing in the peanut butter. Place the cups back into the freezer for a couple of minutes, sprinkle the cups with a little sea salt.
Place the cups into a small container and keep in the fridge until ready to eat. The cups will keep for a couple of weeks if kept in a sealed container and refrigerated. If you prefer these a little sweeter, like the candy version, you can sweeten the peanut butter using of tablespoons mixed in should do the trick.
