I was re­cently lucky enough to be asked to co-host a lav­ish Span­ish din­ner in Berry Bros. & Rudd’s his­toric cel­lars No.3 St James’s Street. It’s al­ways a huge hon­our to be asked to help out at such events and is a keen re­minder of the rich his­tory and pride we feel to work for such a cel­e­brated fam­ily firm.

Dur­ing the evening, we served up a num­ber of im­pres­sive Span­ish dishes along­side di­verse wines from around the coun­try. As it hap­pened, one of the dishes was Sal­morejo and I was struck by how rich and vi­brant it was with re­ally punchy tomato flavours.

Susie’s Hamp­shire twist of rape­seed oil and ham gives the dish a spicier edge and makes it an ex­cit­ing game-changer when match­ing with wine. It will go per­fectly with the fresher styles seen in mod­ern Span­ish wine­mak­ing; here I’ve opted for a food-friendly rosé from Va­len­cia, an en­er­getic Godello from Valde­or­ras and a ripe, re­fresh­ing Tem­pranillo from Rib­era del Duero.
