I was recently lucky enough to be asked to co-host a lavish Spanish dinner in Berry Bros. & Rudd’s historic cellars No.3 St James’s Street. It’s always a huge honour to be asked to help out at such events and is a keen reminder of the rich history and pride we feel to work for such a celebrated family firm.
During the evening, we served up a number of impressive Spanish dishes alongside diverse wines from around the country. As it happened, one of the dishes was Salmorejo and I was struck by how rich and vibrant it was with really punchy tomato flavours.
Susie’s Hampshire twist of rapeseed oil and ham gives the dish a spicier edge and makes it an exciting game-changer when matching with wine. It will go perfectly with the fresher styles seen in modern Spanish winemaking; here I’ve opted for a food-friendly rosé from Valencia, an energetic Godello from Valdeorras and a ripe, refreshing Tempranillo from Ribera del Duero.
