Chef Nobuyuki Mat­suhisa’s first Euro­pean ho­tel show­cases the same luxe aes­thetic as his iconic Ja­panese restau­rants, blended with east Lon­don’s in­dus­trial chic. Long dark cor­ri­dors with flashes of gold lead to 143 sleek bed­rooms that have con­crete walls, twill tex­tiles, globe light fix­tures and beau­ti­ful wa­ter­coloured screens that slide across the win­dows at night. Pure white bath­rooms are ac­cented by gilded Laufen sinks and a bento-box-style unit hides the mini­bar. The ex­te­rior – a Ron Arad com­mis­sion – is a work of art in it­self, with over­hang­ing floor slabs, can­tilevered steel beams and a land­scaped ter­race that bathes the 240-seat base­ment restau­rant in nat­u­ral light. As well as serv­ing Nobu favourites by night, there are tempt­ing break­fast op­tions: matcha waf­fles with smoked maple ponzu and eggs Bene­dict with crispy tofu, snow crab and shiso Béar­naise.
