If you’re go­ing sober for Oc­to­ber, or just plan­ning to cut down a bit be­fore the great Christ­mas booze-fest, then try out this easy but so­phis­ti­cated-look­ing cock­tail. It’s so tasty, it won’t leave you feel­ing sad that you’re giv­ing the hard stuff a swerve. Here’s to be­ing hang­over-free!

Rose­mary & Pome­gran­ate Fizz Serves 8 In­gre­di­ents:

● 400ml pome­gran­ate juice ● 4 sprigs of rose­mary ● Juice of ½ le­mon ● 750ml al­co­hol-free sparkling wine

To gar­nish:

● Pome­gran­ate seeds ● Flow­er­ing rose­mary sprigs

Method:

1 Pour the pome­gran­ate juice into a small saucepan.

2 Lightly bruise the rose­mary by rub­bing it be­tween your fin­gers, then add it to the pan.

3 Bring to a boil and re­duce for ten min­utes, then add the le­mon juice.

4 Leave to cool, then strain and chill un­til ready to use.

5 Pour 30ml of the rose­mary and pome­gran­ate mix­ture into each Cham­pagne flute , then top up with al­co­hol-free sparkling wine.

6 Gar­nish each glass with a few pome­gran­ate jew­els and a flow­er­ing rose­mary sprig.
