Chef’s recipes in new book

TORQUAY chef Simon Hulstone is featured in the debut cookbook from Great British Chefs.

The book includes 120 recipes from 60 of the UK’s best chefs.

Simon, from The Elephant on the harboursid­e, said: “Great British Chefs is a fantastic platform for those with a passion for food and I’m delighted to have my recipes featured in the new cook book.

“My goats cheesecake with red onion jam is a relatively simple recipe that makes an ideal canapé or a delicious addition to a picnic.

“The halibut fillet glazed with lardo, parsnip puree and a verjus and spring onion sauce is a perfect marriage of flavours that will delight seafood lovers as a fish or main course.”

Holding a Michelin star at his Torquay eatery since 2004. His plates feature the best local produce.
