Vanilla almond sugar cookies

Beat the vegan margarine and sugar until smooth. Beat in the aquafaba and the avouring extracts, until it is light and uffy.
Mix the our, baking powder and salt together. Mix them into the margarine mixture until the our is fully incorporated.
Divide the dough in half and shape it into two disks. Wrap them and place them in the fridge for at least two hours.
Pre-heat the oven to 180ºC/350ºF/Gas Mark 4. On a oured surface, roll the dough to inch thick and cut into shapes. Place the cookies on a baking paper-lined baking tray.
Bake for 10-15 minutes, until the cookies are just golden. Transfer to a rack and cool.
