METHOD

Beat the ve­gan mar­garine and sugar un­til smooth. Beat in the aquafaba and the avour­ing ex­tracts, un­til it is light and uffy.

Mix the our, bak­ing pow­der and salt to­gether. Mix them into the mar­garine mix­ture un­til the our is fully in­cor­po­rated.

Di­vide the dough in half and shape it into two disks. Wrap them and place them in the fridge for at least two hours.

Pre-heat the oven to 180ºC/350ºF/Gas Mark 4. On a oured sur­face, roll the dough to inch thick and cut into shapes. Place the cook­ies on a bak­ing pa­per-lined bak­ing tray.

Bake for 10-15 min­utes, un­til the cook­ies are just golden. Trans­fer to a rack and cool.
