Co­conut gra­nola

METHOD

Pre­heat the oven to 160°C/ 325°F/ Gas Mark 3.

Put the co­conut oil, honey, syrup and sugar (if us­ing), vanilla and cin­na­mon in a large oven tray and warm over a low heat un­til melted to­gether and hot, but not smok­ing.

Mix to­gether the rest of the dry in­gre­di­ents, then add them to the tray of hot oil and mix well.

Level the mix­ture out and bake in the pre­heated oven for about 20 min­utes, check­ing and stir­ring ev­ery 5 min­utes. The gra­nola is ready when it has turned a deep golden colour – it will go stale more quickly if the mix­ture is pale and un­der­baked, but do not al­low it to go dark brown as it will taste burnt.

Re­move the tray from the oven and leave the gra­nola to cool, giv­ing it a shake once in a while to stop clump­ing. Pour into a jar with an air­tight lid – it will keep for a few weeks. Top with yo­ghurt and ber­ries.
