Long, sunny days might be ebbing away but we are all for keep­ing that lovely sum­mer feel­ing go­ing! Team ITM en­joyed iced tea in the of ce all sum­mer, and we’ve been in­spired by the recipes in the

Good Vibes Cook­book by Jane and

Myles Lam­berth (Orca Pub­li­ca­tions, £17.99) to keep on drink­ing them well into the au­tumn. Here’s our fave recipe for fen­nel, ap­ple and el­der ower iced tea:

You will need: *Fen­nel Tea

*Fen­nel fronds (leaves) or dill *Ap­ple juice (use equal parts fen­nel tea and ap­ple juice)

*Splash of el­der ower cor­dial

Method: 1. Make one very strong cup of fen­nel

tea and al­low to cool.

2. Once cool, add the ap­ple juice, sweeten with el­der ower cor­dial and pour over ice.

3. Ball up the fen­nel fronds and place on

top, to serve.

And if the au­tumn chill does soon ar­rive, just wrap a blan­ket round your shoul­ders while you sit and sip!
