METHOD

Place all the in­gre­di­ents in a high-pow­ered blender and blitz un­til they form a thick, soup-like con­sis­tency. Leave in the fridge to chill for an hour or two.

Finely chop some more cu­cum­ber and pep­per and sprin­kle on top of the gaz­pa­cho. Add a driz­zle of olive oil to serve.
